My mom had a cake decorating magazine when I was growing up that I remember spending hours going through from cover to cover and back again. I loved the beautiful decorations and intricate designs they could create with icing and wanted so badly to learn how to make one myself. They made it look so easy. Just a put a little icing in a bag and voila! you can be a master cake decorator right? So wrong. I tried numerous times and usually ended up with a goopy mess of something that somewhat resembled a flower melting down the side of my cake. As far as the cake it's self went, It was never horrible, but I always ended up with a heavier drier cake then everyone else seemed to. It felt as though I was doomed to bake ready-made box cakes for the rest of my life. LOL
I finally figured out that going for simpler more messy cakes was a better route for me. Keep it simple.
This cake is a blueberry lemon cake. Hence all the blueberries and lemons. :P
It turned out so much better then I expected and it was super fun to make. But I really can't take all the credit for that. Honestly, I really mostly photographed it. I only made the icing and sprinkled the blueberries on top. LOL
My brother James is the real talent behind this cake bake. Turns out my little brother is an awesome cook and getting better all the time. I gave him a few tips, stood back, and snapped away with my camera. He even made a dairy free apple pie before coming over ( I'm sensitive to dairy ) especially for me to try! ( pictured below ) So thoughtful of him. So I wanted to give a special shout out to my brother for being willing to be my assistant for the day. Thank you James!
